This oven-fried tomato sauce is an ideal way to process the summer harvest without unnecessary chemicals. Thanks to slow baking and sterilization in a blanket, it will last until winter and retain its full, caramelized flavor.

Preparation procedure

  • Vegetable preparation Wash the tomatoes and cut into quarters. Peel the onions and chop coarsely, leave the garlic whole.
  • Seasoning and layering In a deep baking dish mix the tomatoes, onions, whole garlic cloves, oil, salt, sugar, pepper and herbs. Gently stir.
  • Slow baking Place the baking dish into a preheated oven at 200 °C. Bake for 2 h; after the first hour stir the contents so the vegetables brown evenly and caramelize slightly.
  • Blending and seasoning Blend the baked mixture with an immersion blender directly in the baking dish, or transfer to a pot. Bring to a gentle boil and adjust to taste with salt, sugar or herbs.
  • Sterile filling Pour the hot sauce into clean, boiled jars. Immediately seal with lids, turn them upside down and wrap in a blanket. Let cool in an upright position for 1–2 hours.
  • Storage After cooling store in a cool, dark place. Consume within 6 months.
