Preparation procedure
- First, we turn the oven on to 200 degrees Celsius and wash and clean the chicken breasts.
- We dry them with a paper towel and set them aside on a plate.
- We clean the sweet potatoes and cut them into fries.
- We line a baking tray with baking paper, on which we place the sweet potatoes.
- We drizzle them with olive oil, salt and pepper them. Bake them for about 15 minutes.
- Meanwhile, we prepare the asparagus.
- We cut it into smaller pieces, season it with olive oil, salt and pepper, and place it on the tray with the sweet potatoes.
- We salt and pepper the chicken and place it on top of the asparagus and sweet potatoes.
- We bake for about another 15 minutes at a temperature of about 100 degrees Celsius.
- While the chicken breasts are baking, we prepare the balsamic dip.
- In a small pan we add all the necessary ingredients (balsamic vinegar, white wine vinegar, olive oil, lemon juice, garlic, pepper and salt) and simmer it for 5 to 7 minutes, until the sauce slightly thickens.
- We remove the chicken breasts, arrange them with the vegetables on a plate and pour the balsamic dip over them.
- This dish will keep in the fridge for another 4 days, unless a hungry eater eats it sooner. Enjoy your meal.
