Finer than classic Linzer cookies and beautifully crisp thanks to the corn starch and vanilla pudding in the dough. These Christmas ovals are sandwiched with jam after baking, decorated with chocolate and nuts – the result is literally an addictive piece of Christmas confectionery.

Ingredients

For assembling and finishing:

Preparation procedure

  • Mix the dough To a bowl sift the starch, pudding powder and all-purpose flour, add the powdered sugar, baking powder, egg yolk, softened Hera/butter, sour cream and a little lemon zest. Quickly work into a smooth dough. Wrap in plastic wrap and refrigerate for at least 12 hours (ideally overnight).
  • Roll out and cut Let the dough rest for a few minutes to soften, roll out on a lightly floured surface to a thickness of about 3–4 mm. Cut out ovals and place them on a baking sheet lined with parchment paper.
  • Short baking Bake in a preheated oven at 180 °C for about 6–8 minutes until the edges are lightly browned. Don't overbake, the ovals will dry out unnecessarily. Let cool on a rack.
  • Assembling with jam Pair up the cold ovals and sandwich with a thin layer of jam. Let them sit a while so the filling 'sets'.
  • Decorating with chocolate and nuts Melt the chocolate in a double boiler (for shine you can add a teaspoon of oil). Partially dip the ovals or drizzle strips. Sprinkle with ground nuts. The nuts adhere well if you first brush the surface with a little jam or syrup from the compote.

Preparation time and number of servings

  • Total time: approx. 13 hours (of which hands-on 40 minutes + dough chilling min. 12 hours + baking and finishing 40–60 minutes)

  • Number of pieces: approximately 40–50 ovals (depending on cutter size)

Tips for success

  • Chill the dough long enough – it will be easier to roll out and more tender.

  • Bake briefly – a light golden color is the key to delicacy.

  • Store in a sealed container in a cool place; after 1–2 days of resting they taste even better.

Conclusion

Christmas delicate ovals sandwiched with jam are an elegant confection that captivates with a delicate, crumbly texture and a clean vanilla-lemon aroma. Thanks to the corn starch and pudding, the dough literally melts in the mouth. Make them ahead — they benefit from resting — and enjoy a classic that never fails on the holiday table.
