- If you need a double amount, make the cream in batches. In large quantities the cream will not set properly.
- Brew the coffee and add rum to it.
- Let the ladyfingers soak in the coffee with rum.
- Arrange the soaked ladyfingers on a baking tray.
- Spread with the cream-and-mascarpone mixture.
- Then arrange more ladyfingers on the layer of filling.
- Spread the filling again.
- For decoration you can dust with cocoa.
