If you don’t have time to wait for dough to rise, try these quick and fragrant crispy rolls. You only need four basic ingredients and in no time you have warm pastries that you can fill as you like – with poppy seeds, nuts, jam, or cottage cheese.

Preparation procedure

  • Dough preparation In a bowl, work the butter cut into cubes into the flour with your hands until a crumbly mixture forms. Add the baking soda and sour cream, work into a smooth dough. If the dough is too sticky, add a little flour.
  • Chilling Wrap the dough in cling film and let it chill in the refrigerator for 30 min so it firms up.
  • Preparing the fillings Poppy seed: pour hot water over the ground poppy seeds, let steep for 10 min, then sweeten with sugar. Walnut: mix the ground walnuts with sugar.
  • Shaping the rolls Roll out the dough to a thickness of approx. 1 mm, cut into triangles. On the wider side of each triangle place a teaspoon of filling and roll toward the tip.
  • Baking Place the rolls on a baking tray lined with baking paper. Bake in an oven preheated to 180 °C for about 15 min, until they turn golden. While still warm, dust them with powdered sugar.
