Curd and nut koláčky are a traditional Czech treat that will delight anyone with a sweet tooth. Their delicate buttery pastry combined with the rich nut filling and the fresh curd filling creates a perfect flavor experience. This recipe is ideal for festive moments, family celebrations or simply with afternoon coffee.

Ingredients

For the dough:

250 g quark (in a block)
250–280 g all-purpose flour
250 g butter (or Hera butter margarine)
1/4 teaspoon baking powder
1 packet vanilla sugar
grated zest of 1 lemon
a pinch of salt

For the nut filling:

150 g ground walnuts
50 ml milk
1 teaspoon rum
1 tablespoon povidla (plum butter) or jam
1 teaspoon butter
1/2 teaspoon cinnamon
1/2 teaspoon lemon zest
1 teaspoon honey
fine breadcrumbs (as needed)

For the curd filling:

250 g quark
1 egg
2 tablespoons sugar
1 teaspoon solamyl (or cornstarch)
1/2 teaspoon lemon zest

Preparation procedure

Dough: Work the quark, butter, flour, baking powder, vanilla sugar, salt and lemon zest into a smooth dough. If it sticks, add a little flour. Let rest in the refrigerator for at least 2 hours.
Nut filling: Cook the nuts in the milk. Add povidla, butter, rum, lemon zest, cinnamon and honey. Thicken with a little breadcrumbs so the mixture holds its shape.
Curd filling: Mix the quark with the egg, sugar, solamyl and lemon zest.
Shaping: Roll the dough out to about 4 mm and cut out circles (about 5 cm). Put a teaspoon of nut or curd filling in the center. Fold and seal with the seam-side down. Place on a baking sheet lined with parchment paper.
Baking: Bake at 180 °C for about 15 minutes until golden.
