Preparation procedure

  • Dough preparation Mix the flour, powdered sugar, cocoa and vanilla extract. Add the soft butter and egg. Work into a smooth, firm dough by hand or in a mixer. Wrap it in cling film and let rest in the fridge for 20–30 minutes – it will be easier to work with.
  • Shaping and baking Roll the dough into a sheet about 4 mm thick. Cut out circles or other small shapes. Bake at 170 °C for approximately 8–10 minutes. Let cool completely – only then fill them.
  • Ganache preparation Chop the white chocolate into a bowl. Heat the cream almost to a boil, pour over the chocolate and stir until a smooth cream forms. Cover with cling film and put in the fridge preferably overnight. Before using, whip the ganache to a firmer consistency.
  • Assembling the rounds Spread a layer of ganache on the bottom piece of each round. Top with the second round.
  • Cherry layer Warm the cherry jam slightly to make it more fluid. Using a piping bag, pipe it into the center of each round.
  • Decoration You can decorate the rounds with chocolate glaze, chocolate shavings or small decorations to taste.
