Thanks to using a pre-ferment you don’t have to proof the dough for long, yet the result will be a perfectly airy and buttery flaky pastry.

Preparation procedure

  • Preparation of the starter Sprinkle a tablespoon of sugar into the lukewarm milk and crumble the yeast. Leave for 5–10 minutes in a warm place, until the starter begins to foam.
  • Dough In a bowl, whisk the yolks with the sugar until pale and foamy, stir in the softened butter and grated lemon zest. Add the prepared starter, salt and gradually beat in the sifted flour while mixing. Work into a smooth dough.
  • Resting the dough Cover the dough with a cloth and let it rest for 10 minutes (no long proofing needed).
  • Shaping the pastries On a floured work surface, roll the dough into a sheet about 0.5 cm thick. Cut squares with sides of 8–10 cm. Put a teaspoon of the chosen filling in the center of each and fold the corners into the center to form a little parcel.
  • Brushing and baking Place the pastries on a baking sheet lined with parchment paper. Brush them lightly with the beaten egg white. Bake in a preheated oven at 180 °C (convection 160 °C) for 15 minutes until golden.
  • Finishing While still warm, dust the pastries with powdered sugar. Let them cool slightly and serve.

  • Baking: 15 minutes

  • Total active: 45 minutes (+ 10 minutes cooling)
