Ingredients: 4 eggs; 150 g granulated sugar; 150 g plain flour; 8 g baking powder; A pan measuring 35 x 38 cm; 250 ml water; 150 g powdered sugar; Lemon zest; 8 g vanilla sugar; 500 g whipping cream (if you use unsweetened whipping cream, add 150–200 g powdered sugar); 8 g vanilla sugar; 250 g mascarpone or soft quark

Preparing the batter: Whisk the eggs in a bowl until frothy. Then add the granulated sugar and continue whisking at high speed for about 8–10 minutes, until a voluminous, whitish foam forms.

Adding the dry ingredients: Fold the sifted flour and baking powder into the whipped mixture, using low mixing speed. Spread the batter onto a baking sheet lined with parchment paper and smooth it.

Baking the cake: Place the sheet in a preheated oven at 180 °C and bake for about 10–15 minutes. Perform a toothpick test and if the cake is done, remove it from the oven. Carefully flip the cake, remove the parchment paper and let it cool. Then cut it into 4 equal parts.

Preparing the syrup: In a saucepan, mix the water, powdered sugar and vanilla sugar. Add the lemon zest and heat until the sugar is completely dissolved. Let the syrup cool and pour it into a bowl.

Preparing the cream: In a separate bowl, beat the mascarpone until smooth. If you are using unsweetened whipping cream, add powdered sugar to it. Whip the cream to stiff peaks and then combine it with the mascarpone. Add vanilla sugar, cocoa or fruit syrup to taste.

Assembling the cake: Place the first piece of baked cake on a serving tray, pour syrup over it and spread a layer of cream. Repeat the layers gradually, taking care not to pour syrup over the last layer. Cover the top and sides of the cake with the remaining cream and decorate as desired using a piping bag.
