Make a soft and delicious cheese at home that will delight the whole family. This recipe is simple, quick, and requires only four basic ingredients. Homemade cheese is a great alternative to store-bought varieties and can be used as an ingredient in salads, on bread, or simply on its own.

Preparation procedure

  • Cooking the base mixture: Pour the milk into a pot, add the salt and bring to a boil over medium heat. Once the milk begins to boil, add the sour cream and eggs.
  • Separating the curds: Stir the mixture continuously for 5 minutes, until the curds begin to separate from the whey.
  • Straining: Prepare a colander lined with cheesecloth. Pour the mixture into the colander and let all the whey drain. For better compaction of the cheese you can pull the cheesecloth tight and weigh it down, for example with a plate and a heavy object.
  • Chilling in the refrigerator: Leave the cheese in the refrigerator for several hours to firm up and acquire a smooth consistency.
  • Serving: Cut the finished cheese and serve to taste – on bread, with fresh vegetables, or on its own.

Tips and tricks:

  • Use fresh milk, ideally whole milk, to make the cheese more flavorful.
  • You can replace the sour cream with yogurt if you prefer a lighter taste.
  • Leftover whey can be used, for example, for baking homemade bread or pancakes.
