This simple and quick stuffed potato recipe will delight you with its flavor and keep you full all afternoon. Stuffed potatoes are an ideal lunch that you can serve on their own or as a side dish to meat.

Preparation procedure

  • Preparation of the potatoes: Wash the potatoes and cut them in half. Use a spoon to scoop out the inside of each potato half to create space for the filling.
  • Preparation of the filling: Finely chop the champignon mushrooms and the onion. Heat 50 g of butter in a pan and add the mushrooms. Fry them until they soften, then add the onion.
  • Thickening the sauce: Add a tablespoon of all-purpose flour to the mixture and mix everything well.
  • Adding the cream: Pour in the cream, mix well, season with salt and pepper and cook for 3-5 minutes until the sauce thickens.
  • Filling the potatoes: Salt and pepper each potato half. Divide the remaining 20 g of butter between the potato halves and place a piece of butter in each.
  • Baking: Place the potatoes on a baking tray greased with butter and fill them with the prepared mushroom mixture.
  • First baking: Preheat the oven to 190°C and bake for 15 minutes.
  • Adding the cheese: After 15 minutes, remove the potatoes, sprinkle with grated cheese and bake for another 20 minutes until the cheese is nicely golden and crispy.
