Preparation procedure

  • Vegetable preparation: Grind the onion, carrot, pepper and tomatoes in a meat grinder. Dice the zucchini into small cubes.
  • Sauce base: Put the ground vegetables into a large pot or deep pan. Add the sugar, peppercorns, ground pepper, oil and salt. Mix everything well.
  • Cooking: Bring to a boil and add the chopped zucchini. Stir again and simmer over low heat for about 1 hour, until the mixture reaches the desired thickness and flavor.
  • Seasoning: Taste during cooking and adjust the amount of salt or sugar as needed. Finally add the pressed garlic and vinegar, stir well and remove from the heat.
  • Canning: Fill the hot mixture into sterilized jars, seal them immediately and turn them upside down. Cover with a blanket and let cool until the next day.
  • Storage: Store the jars in a dry, cool place. The sauce is excellent as a base for other sauces, for pasta, in risotto or with grilled meat.
