Preparation procedure

  • Preparation of the dough: In a bowl, mix the flour, powdered sugar, ground walnuts, cocoa, cinnamon, lemon zest and juice. Add the egg and softened butter. Work into a smooth dough, and fill the tartlet molds with it. Bake in an oven preheated to 175 °C for about 10–12 minutes. After baking, let cool and carefully unmold.
  • Walnut filling: Mix the ground walnuts with the powdered and vanilla sugar, add the rum and mix well.
  • Filling the cups: Spread a thin layer of currant jam on the cooled cups and heap the walnut filling on top. Level the surface and let rest for a while.
  • Chocolate cream: Whisk the eggs, sugar and vanilla sugar in a double boiler until thickened. Let cool, then beat in the softened butter and cocoa until a smooth, fluffy cream forms. Pipe the cream onto the cups using a piping bag and put them in the refrigerator to set.
  • Chocolate glaze: Melt the chocolate with the shortening over a double boiler and stir until smooth. Dip the chilled cups into the glaze and let them harden on a rack.
