A summer classic that never disappoints. A delicate sponge base, a rich strawberry layer with gelatin and on top a fluffy cream stabilized with gelatin so it holds its shape beautifully. The slices are fresh, light and look perfect on the plate – ideal for family celebrations and a Sunday dessert.

Preparation procedure

  • Conclusion These strawberry slices with whipped cream combine the best of summer desserts: a light sponge, intense strawberry flavor and a fluffy cream. Thanks to the gelatin they hold a beautiful shape and cut well, so they are also suitable for festive tables. Prepare them a day in advance – the flavors will meld and the slices will be even better.
  • Strawberry layer Dissolve the gelatin in a small portion of hot water, let it cool. Puree the strawberries, add the powdered sugar and heat to a boil. Remove from heat. Stir in the dissolved gelatin, let it cool slightly and add the strawberry jelly. When the mixture starts to thicken (approx. after 30 minutes in the fridge), spread it over the cooled crust. Chill until set.
  • Whipped cream Dissolve the gelatin in boiling water, stir and let it cool. Whip the cream with the sugars until stiff, add the lemon juice. Drizzle the lukewarm gelatin in a thin stream while whipping. Spread the cream over the set strawberry layer and smooth. Return to the fridge for at least 1 hour.
  • Finishing Decorate the surface with strawberries. Cut with a sharp knife dipped in hot water for clean slices.
