Preparation procedure

  • Preparing the cucumbers Thoroughly wash the cucumbers and trim the tips from both ends. Cut larger ones lengthwise into quarters, smaller ones in half. Soak them in cold water for 2 hours to preserve their crunchiness.
  • Making the brine Pour 3 liters of water into a large pot, add the salt, sugar, mustard seeds and bay leaves. Bring to a boil and stir thoroughly until the salt and sugar dissolve.
  • Adding vinegar Pour the vinegar into the boiling mixture and briefly boil it again.
  • Short blanching Place the cucumbers into the boiling marinade and let them bubble for 2–3 minutes until they slightly change color. Do not overcook.
  • Filling and sealing the jars Immediately pack the cucumbers into clean, dry jars and pour the hot brine over them up to the rim. Close, turn upside down and wrap in a blanket. Let cool slowly.
