Preparation procedure

  • Cooking the fleky In a large pot bring salted water to a boil. Add the fleky and, together with a little turmeric, cook according to the instructions (approx. 8–10 min), until al dente. Drain and set aside.
  • Preparing the sauerkraut with meat Heat the lard (or oil) in a pan, add the finely chopped onion and fry until golden. Sprinkle in the caraway, stir and sauté briefly.
  • Simmering Add the sauerkraut and the cubes of smoked pork knuckle, add a little water and simmer over low heat for 15–20 min, until the cabbage softens and the flavors meld. Season with salt and pepper as needed.
  • Finishing the dish Add the drained fleky to the pan with the stewed sauerkraut and meat and mix everything thoroughly so the pasta is coated with the sauce.
  • Serving Serve immediately, ideally with a glass of robust red wine or homemade sourdough bread.
