  • Preparing the pudding mixture: Heat 3/4 of the milk in a saucepan. In deep bowls separate the yolks from the whites. Mix the yolks with the sugar, vanilla sugar and cornstarch. Add the remaining milk and whisk well until smooth.
  • Preparing the gelatin: Add the gelatin to a bowl, pour water over it and stir until it dissolves. Let it bloom for about 10 minutes.
  • Cooking the cream: Take the hot milk off the heat and, while constantly stirring, pour in the yolk mixture. Cook until the cream thickens. Add a little hot cream to the bloomed gelatin, stir and pour the whole mixture back into the pot with the cream. Mix thoroughly.
  • Finalizing the cream: Let the cream cool. Meanwhile, whip the egg whites into stiff peaks. Once the cream has cooled, pour it into a larger bowl and gradually fold in the whipped egg whites. Gently mix. If you like, add grated lemon zest for extra flavor.
  • Assembling the cake: Place the first sheet of pastry at the bottom of a glass dish, spread it with the prepared cream and cover it with the baked pastry squares. Cover the cake with parchment paper and let it rest overnight in the refrigerator.
  • Finishing and serving: After removing from the refrigerator, dust the dessert with powdered sugar and you can start serving. Kremes is ideal as a dessert for celebrations, but also for regular family gatherings.
