If you like creamy desserts, this fluffy kremes is exactly what you’re looking for. The combination of crispy puff pastry and delicate vanilla cream will create an irresistible experience for your taste buds. Although the preparation may be a bit more demanding, the result is definitely worth it! This dessert is ideal for family celebrations, holidays, or simply for moments when you want to surprise someone with a delicious treat.

Ingredients

500 g puff pastry
10 eggs (yolks and whites separated)
1.5 liters of milk
150 g cornstarch
350-400 g granulated sugar
30 g vanilla sugar (or 2 tablespoons vanilla extract)
30 g gelatin
1 glass of water
Lemon zest (optional)

Preparation procedure

Preparing the dough: Turn the baking sheet upside down and place the puff pastry on it with parchment paper. Bake in a preheated oven at 200°C for 10 minutes. Do the same with the second sheet of pastry, which you will cut into 24 squares and bake.
Preparing the pudding mixture: Heat 3/4 of the milk in a saucepan. In deep bowls separate the yolks from the whites. Mix the yolks with the sugar, vanilla sugar and cornstarch. Add the remaining milk and whisk well until smooth.
Preparing the gelatin: Add the gelatin to a bowl, pour water over it and stir until it dissolves. Let it bloom for about 10 minutes.
Cooking the cream: Take the hot milk off the heat and, while constantly stirring, pour in the yolk mixture. Cook until the cream thickens. Add a little hot cream to the bloomed gelatin, stir and pour the whole mixture back into the pot with the cream. Mix thoroughly.
Finalizing the cream: Let the cream cool. Meanwhile, whip the egg whites into stiff peaks. Once the cream has cooled, pour it into a larger bowl and gradually fold in the whipped egg whites. Gently mix. If you like, add grated lemon zest for extra flavor.
Assembling the cake: Place the first sheet of pastry at the bottom of a glass dish, spread it with the prepared cream and cover it with the baked pastry squares. Cover the cake with parchment paper and let it rest overnight in the refrigerator.
Finishing and serving: After removing from the refrigerator, dust the dessert with powdered sugar and you can start serving. Kremes is ideal as a dessert for celebrations, but also for regular family gatherings.
