A hearty sheet dessert with a layer of juicy apples, a fluffy sponge base and a delicate pudding cream. It smells wonderfully of cinnamon and vanilla and looks impressive in cross-section thanks to the „upside-down“ layering.

Preparation procedure

  • Prepare the apples. Mix the peeled and grated apples with the vanilla sugar. Line a baking sheet with parchment paper and spread the apple layer evenly over it.
  • Whip the sponge. Beat the yolks with the icing sugar until pale and frothy, add the water and fold in the flour with the baking powder. Whip the egg whites to stiff peaks and gently fold them into the yolk mixture. Spread the batter over the apples.
  • Bake. In an oven preheated to 180 °C bake for 25–30 minutes until golden. Let cool completely on the tray.
  • Cook the pudding. From the milk, Zlatý klas and the sugars cook a thick pudding, cover with cling film „on the surface“ and let cool to room temperature. Beat the butter until fluffy and gradually beat in the cooled pudding – a smooth cream will form.
  • Turning and spreading. Carefully turn the cooled cake out of the tray so that the apples are on top, and remove the paper. Evenly spread the pudding cream over the apple layer.
  • Whipped cream and chocolate. Whip the cream until firm, spread it over the cream and sprinkle the surface with finely grated chocolate. Let chill and set for at least 2 hours.

Tip:

A great variation is to skip the cream and pour chocolate glaze directly over the apples after turning out. Before serving you can add a dollop of whipped cream.
