These fluffy orange cakes can be prepared within half an hour, without a mixer and with a minimal amount of ingredients. The delicate taste of butter, fresh orange and a crispy edge make them ideal with coffee or tea.

Ingredients

1 large orange (zest and squeezed juice, approx. 150 ml)
150 g granulated sugar
150 g butter (or good margarine), softened
3 eggs
250 g all-purpose flour
2 teaspoons baking powder
1 teaspoon vanilla sugar (optional)

Preparation procedure

Preparing the orange Thoroughly wash and dry the orange. Grate only the orange part of the peel and squeeze out the juice.
Batter base In a bowl, beat the softened butter with the sugar (and vanilla sugar, if using) until fluffy. Add the eggs and beat thoroughly.
Fragrant combination Stir the orange juice and zest into the butter mixture; a loose batter will form.
Thickening the batter Mix the flour with the baking powder and gradually work it into the mixture to create a smooth but still moist batter.
Filling the molds Grease muffin or tart molds with butter or oil. Fill each two-thirds full with the batter.
Baking Preheat the oven to 180 °C. Bake for 20 minutes until the cakes are golden and a skewer inserted into the center comes out clean.
