Preparation procedure

  • Preparing the dough: In a large bowl, mix the flour with the powdered sugar. Add the cold butter cut into pieces and use your fingers or a food processor to create a crumbly consistency. Quickly bring together into a smooth dough, wrap in plastic wrap and let rest in the refrigerator for 30 minutes.
  • Shaping the tartlets: Preheat the oven to 180 °C. Roll the dough out to a thickness of 3–4 mm and cut out circles, placing them into tartlet tins. Prick the bottoms lightly with a fork and bake 12–15 min, until the edges are lightly golden. Remove from the tins and let cool.
  • Preparing the pudding cream: In a saucepan bring 500 ml of milk with the sugar to a boil. Mix the remaining 100 ml of milk with the two puddings. As soon as the milk boils, pour in the pudding mixture and, stirring constantly, cook for 2 minutes until thickened. Remove from the heat, add the butter and whisk until smooth. Let cool.
  • Filling and decorating: Fill the cooled tartlets with the pudding cream. Arrange fresh fruit on the cream. Prepare the gelatin according to the instructions and gently pour it over the fruit for a glossy finish. Chill in the refrigerator for at least 1 hour.
