  • Preparing the potatoes Peel the potatoes and grate them finely. Grate the onion the same way. Transfer the grated potatoes to a clean cloth and squeeze out the excess liquid thoroughly. Only then will the pancakes be crispy and not soggy.
  • Mixing the ingredients Return the potatoes to the bowl, add the onion, crushed garlic, salt, pepper and nutmeg. Mix. Add the eggs and gradually the flour until you get a thick but spreadable batter. Let rest for 10 minutes.
  • Frying Heat a sufficient amount of oil in a pan to about 170–180 °C. Shape the batter into patties with a spoon and place them into the hot oil. Fry on both sides until golden, about 3–4 minutes per side.
  • Finishing Transfer the finished pancakes to paper towels to absorb excess oil. Serve hot.
  • Serving They're great with sour cream, chives or a portion of sauerkraut. For festive occasions a herb or garlic dip also works well.
