Preparation procedure

  • Preparing the dough: In a bowl, mix the flour with a pinch of salt, add the egg and sour cream. Work into a smooth dough that does not stick to the sides of the bowl. Roll the dough into a sheet about 0.5 cm thick.
  • Topping the dough (crumb): In a bowl, mix the all-purpose flour with pieces of fat by hand until a crumbly mixture forms. Evenly spread the crumble over the surface of the rolled-out dough.
  • Rolling and chilling: Roll the dough with the crumble lengthwise into a roulade. For a better shape, let the roulade rest briefly (10–15 min) in the refrigerator – you can skip this step.
  • Shaping the strudels: Cut four pieces from the roulade. Roll each piece into a thin sheet, place the filling in the center and add a little sour cream on top. Roll the sheet tightly, pressing the edges.
  • Baking: Prepare a baking sheet greased with fat and dusted with flour. Place the strudel on it with the seams down. Brush the surface with sour cream mixed with oil. Bake in an oven preheated to 180 °C (fan 160 °C) for 30–35 minutes until golden.
