Preparation procedure
- Mix the flour, sugar, butter, baking powder, 3 egg yolks and cocoa to form the cake dough.
- Once you have a smooth dough, divide it in half, wrap each portion in aluminum foil and put in the freezer for 30 minutes.
- Crumble the quark with your fingers, add 150 g powdered sugar, an egg yolk and the vanilla sugar. You can also add lemon zest.
- Whip the egg whites and mix with the quark.
- Line the baking pan with baking paper.
- Take one half of the dough out of the freezer and simply grate it using a cheese grater.
- Smooth the bottom layer in the pan with your palm.
- Place the entire quark mixture on this layer – grate the second half of the dough.
- Bake the cake for about 30 minutes at 180°C. Enjoy!
