  • Squeeze the sauerkraut and finely chop it on the cutting board. We like our sauerkraut quite sour at home, but you can rinse it with water to suit your taste.
  • Melt the sugar in a heavy-bottomed pan.
  • When it has a golden color, add the lard, stir and let it melt.
  • When the fat is heated, add the onion and sauté.
  • Add the sauerkraut, sauté briefly, then pour in hot water so it comes above the cabbage.
  • When the water starts to boil, cover the cabbage with a lid and simmer on low heat until the cabbage is soft (approx. 30 minutes).
  • Then remove the lid and let the water evaporate (but not completely, leave a little juice in the cabbage, it will be even better).
  • Serve with meat to taste.
