  • Preparation of the meat and livers: Cook the pork until tender in salted water. Blanch the livers in hot water to remove bitterness, then let them cool.
  • Grinding and mixing: Grind the meat, livers, onion and garlic through a meat grinder. Add the squeezed bread, eggs, marjoram, allspice, pepper and salt. Mix everything thoroughly until you have a smooth and pliable mixture.
  • Filling the casings: Fill the prepared mixture into the casings, but not too tightly – they could burst while cooking.
  • Cooking: Place the sausages into hot (not boiling) water at around 85 °C and cook for approximately 30–40 minutes. Then let them cool in the water, afterwards dry them and store in the refrigerator.
  • Serving: Serve fresh, while still warm, with crusty bread, pickled cucumber or mustard. They are also excellent pan-fried or lightly smoked.
