Airy choux rings, silky pudding-buttercream and light mascarpone whipped cream. A festive dessert that looks professional but you can make it at home step by step. A great choice for family celebrations and Sunday coffee.

Preparation procedure

  • Choux pastry (rings): Bring the water with a pinch of salt to a boil, add the butter and let it melt. Stir in the flour and mix until the dough comes together and a white film starts to form on the bottom. Remove from heat, let cool to lukewarm and beat in the eggs one at a time into a smooth dough. Pipe onto a baking sheet lined with parchment paper in ring shapes. Bake 15 minutes at 200 °C, then reduce to 180 °C and continue baking until golden. Do not open the oven during baking.
  • Pudding-buttercream: From the milk, sugar, vanilla sugar, rum and pudding powders, cook a thick pudding. Cover with cling film so it touches the surface and let cool to room temperature. Into the cold pudding beat in the softened butter until smooth.
  • Mascarpone whipped cream: Whip the mascarpone with the powdered sugar. Separately whip the cream with the stabilizer and gently combine with the mascarpone into a fluffy cream.
  • Citrus glaze: Mix lemon juice, powdered sugar and a little rum to form a thick glaze.
  • Finishing: Cut the cooled rings open, fill with the pudding-buttercream, pipe the mascarpone whipped cream on top, replace the top and pour the glaze over the surface. Let cool briefly.
