Preparation procedure

  • Preparation of homemade cheese Pour the milk into a larger pot and heat it over medium heat until it begins to gently simmer. As soon as it reaches a light boil, pour the vinegar in a thin stream while stirring. The milk will immediately curdle into white lumps and yellow whey. Let it sit for 1–2 minutes. Strain the pot's contents through a fine sieve or cheesecloth and let it drain thoroughly. Gently squeeze the cloth so the cheese doesn't retain too much liquid. In a bowl, mix the curds with salt, butter and herbs. Shape into a ball, wrap in plastic wrap and chill for 1–2 hours to set.
  • Preparation of the vegetable salad Slice the cucumber into thin slices or small cubes. Remove the seeds from the pepper and cut into strips. Cut the cherry tomatoes in half. Finely chop the parsley. Put everything into a bowl, drizzle with oil, season with salt and pepper and mix.
  • Serving Cut the chilled cheese into slices or cubes. Serve together with the vegetable salad. This is a light, fresh and well-balanced dish suitable for the whole family.
