Tender sour cream and plain yogurt rolls – easy leavened dough, cheesy filling, step by step. Perfectly fluffy pastries ready with minimal work.

Fragrant savory pastry that even a beginner can handle. Sour cream and yogurt rolls are beautifully fluffy, tender and, thanks to the layer of cold butter, gently laminated. They go well with soups, as a snack or on the table for guests – and disappear faster than they can cool.

Preparation procedure

  • Starter – In a bowl mix the yogurt, milk and sour cream, add the sugar, crumble the yeast and stir in 4 small teaspoons of flour. Leave in a warm place to rise.
  • Dough – Add the eggs, oil, salt and the remaining flour. Work into a smooth, elastic dough. Cover and let rise until it doubles in volume.
  • Butter layer – Roll out the risen dough on a lightly floured surface, evenly sprinkle the top with coarsely grated cold butter, roll into a „roláda“ and let rest for 20 minutes.
  • Shaping – Roll out again into a rectangle, cut lengthwise into 5 strips and from them into triangles. Sprinkle each triangle with cheese, roll from the wider side into a roll and place on a baking sheet lined with parchment paper.
  • Final rise and baking – Brush the rolls with beaten egg yolk. Bake in an oven preheated to 180 °C for about 20 minutes until golden.

Tips

  • Grate the butter straight from the fridge; the rolls will be gently layered.

  • Choose a well-melting cheese (Gouda, Edam, Cheddar); you can replace part with ham or herbs.

  • Finished rolls can be frozen after cooling; when reheated they taste like fresh.
