Do you want fresh, creamy yogurt without additives and without a yogurt maker? All you need is whole milk, a bit of sour cream as a starter and 24 hours of rest in a warm place. The result is a smooth, naturally thick yogurt that you can easily flavor with fruit, honey or nuts – and from a few tablespoons of the finished product you can make another batch.

Preparation procedure

  • Heating the milk Bring the milk to a boil, then remove from heat and let it cool to about 30–35 °C (pleasantly warm to the touch).
  • Inoculating with the culture Whisk 2 tablespoons of sour cream into the lukewarm milk until smooth.
  • Fermentation Cover the container (lid/cloth), place it in a warm draught-free spot and leave it to stand for 24 hours. Ideal is a switched-off oven with the light on, by a radiator, or the container wrapped in a blanket.
  • Cooling and serving Stir the set yogurt, transfer to the fridge and let cool for at least 2 hours. Serve plain or with your favorite toppings.

Tips:

  • For a thicker “Greek” style, strain the yogurt through cheesecloth/filter for 2–4 hours in the fridge.

  • For the next batch, use 2 tablespoons of your own yogurt instead of sour cream.

  • Pay attention to the cleanliness of containers and utensils; store in the fridge and consume within 5–7 days.
