Crisp honey cookies, buttery-pudding cream, fluffy whipped cream and a delicate dusting of sugar. Honey rounds are an elegant small confection that melts on the tongue and is great for celebrations or Sunday coffee. Thanks to the thin dough and short baking time they’re ready in no time, but they taste best after resting overnight.

Preparation procedure

  • Dough – Sift the flour and sugar into a bowl, add honey, softened butter, egg, egg yolk and baking soda. Quickly work into a smooth, non-sticky dough.
  • Rolling and cutting – Roll the dough on a lightly floured surface to about 3 mm thickness. Cut out circles (diameter 4–5 cm) and place on a baking sheet lined with parchment paper.
  • Baking – Bake in a preheated oven at 180 °C for 6–7 minutes until lightly golden. Do not overbake, otherwise they will be hard. Let cool completely.
  • Cream – Cook a thick pudding from the milk and Zlatý klas. Immediately cover the surface with cling film "touching the surface" and let cool at room temperature. Whip the softened butter with the powdered sugar until frothy and gradually beat in the cooled pudding (both components must be the same temperature). Transfer into a piping bag.
  • Whipped cream – Whip the cold cream with Smetafix and powdered sugar to stiff peaks. Also put it into a bag with a decorative tip.
  • Assembly – Pipe a ring of cream onto one honey round, a smaller "cap" of whipped cream in the centre and top with a second round. Press together lightly.
  • Resting and serving – Store in the fridge and let soften until the next day. Before serving dust with powdered sugar.

Total preparation time: 13 hours (active about 45 minutes, baking 2× 6–7 minutes, chilling and resting overnight)

Tips

  • If you want to store the rounds longer, omit the whipped cream and sandwich only with the cream; you can add the whipped cream just before serving.

  • Work the dough quickly so the butter doesn’t soften – the rounds will retain their shape and crispness.

  • For a stronger aroma use quality blossom honey and a pinch of ground vanilla in the dough.
