A light sponge base, juicy apricots and a delicate quark layer – that’s exactly the cake that is rightly popular in Hungary. The batter is prepared simply “by the cup”, it rises beautifully and thanks to the apricots it stays juicy even after cooling. An ideal summer sheet-pan dessert for the whole family.

Preparation procedure

  • Preheat the oven and prepare the sheet pan. Set to 180 °C (top/bottom heat). Line the sheet pan with baking paper.
  • Whip the base. Beat the eggs with the granulated sugar and a pinch of salt until light and frothy. Gradually whisk in the milk and oil in a thin stream. The mixture should be airy and smooth.
  • Stir in the dry ingredients. Mix the flour with the baking powder and gently fold it into the foam with a spatula, only until combined. Spread the batter on the prepared sheet pan.
  • Prepare the quark. Mix the quark with the egg, icing sugar and optionally vanilla or lemon zest. Using a spoon, dollop it unevenly onto the batter (nice quark "islands" will form).
  • Arrange the apricots. Place the apricot halves cut-side up across the entire surface. For very juicy apricots, lightly pat them dry with a paper towel.
  • Bake. Put into the preheated oven and bake 28–32 minutes, until the surface is golden and a skewer inserted into the center comes out dry.
  • Finish. Let cool briefly on a wire rack and dust with icing sugar before slicing.

Total preparation time: 50–55 minutes (15 minutes prep + 30 minutes baking + 5–10 minutes cooling)

Tips to ensure success

  • If the apricots are very tart, lightly sprinkle them with vanilla sugar directly on the sheet pan.

  • Want firmer quark “islands”? Stir a teaspoon of cornstarch into the quark.

  • Instead of apricots you can use plums, peaches or nectarines; baking time remains similar.
