If you want to elevate the classic fried cutlets to a new level, try this recipe: cutlets marinated in yogurt, crisply breaded and then slowly stewed in an aromatic broth with butter. The result is tender, juicy meat that melts in your mouth.

  • Marination Salt and pepper the cutlets and place them in a bowl with plain yogurt. Cover and let rest in the refrigerator overnight.
  • Breading The next day, remove the cutlets from the yogurt and let them drain a little. Beat the egg with a fork in a deep plate, pour the breadcrumbs into a second plate. Coat each cutlet first in the egg and then in the breadcrumbs.
  • Pre-frying Heat oil or lard in a pan. Fry the breaded cutlets on both sides until golden (about 3–4 minutes per side). Transfer them to a clean baking sheet or plate.
  • Preparing the broth In a small pot, dissolve the stock cube in ½ l of water and bring to a boil.
  • Simmering the drowned cutlets Arrange the cutlets back on the baking sheet, pour over the prepared broth. Place a piece of butter on each cutlet. Bake in an oven preheated to 180 °C uncovered for 10–15 minutes, until the broth is partially absorbed and the sauce thickens.
  • Serving Serve the drowned cutlets hot, preferably with braised potatoes or mashed potatoes that soak up the remaining sauce.
