Preparation procedure

  • In a saucepan, heat the water with the butter and a pinch of salt. Remove from the heat and let the dough cool slightly (about 5 minutes). Then, using a mixer, beat in the eggs one at a time, always waiting until the previous egg is fully incorporated. Divide the dough into two equal portions, spread them onto two baking sheets lined with parchment paper and smooth into a rectangular shape.
  • Baking the dough Preheat the oven to 200 °C (convection 180 °C). Place the sheets with the dough and bake for 30 minutes; do not open the oven during baking. After baking, let the sheets cool.
  • Preparing the caramel pudding Carefully caramelize the granulated sugar in a medium saucepan. When the caramel takes on a golden color, pour in 3/4 l of milk and allow it to dissolve without stirring. In the remaining milk, dissolve the pudding powders and pour into the caramel milk. Stirring constantly, cook a thick pudding. Remove from heat and let cool.
  • Whipped caramel cream Beat the butter until fluffy, then gradually fold in the cooled caramel pudding by tablespoons. In a second bowl, whip the cream with the stabilizer until stiff.
  • Assembling the cream puff Spread the caramel cream evenly on the first sheet of dough. Layer the whipped cream on top. Cover with the second sheet of dough and press lightly. Place in the refrigerator for at least 2 hours so the cream can set.
  • Preparing the caramel glaze In a clean saucepan, again caramelize the sugar, pour in 7 tablespoons of milk and let it dissolve. Stir in the powdered sugar to create a smooth glaze. While still warm, spread it over the surface of the cream puff.
