Meter Cake is among the most popular festive desserts. The airy two-colored batter, delicate vanilla-butter cream and glossy chocolate glaze create a combination that is guaranteed to delight the whole family. This cake is not only beautiful to look at, but also exceptionally tasty – ideal with Sunday coffee, for celebrations and for the Christmas table.

Preparation procedure

  • Preparation of pans and ingredients: Prepare two srnčí hřbet pans (approx. 30 cm). Grease them with butter and dust with flour. Preheat the oven to 180 °C.
  • Dough: Separate the yolks from the whites. Whip the whites with a pinch of salt into stiff peaks. Beat the yolks with the sugar until frothy, add the oil, water and mix. Then work in the flour mixed with baking powder and finally gently fold in the egg white foam.
  • Two-colored batter: Pour half of the batter into the first pan. Add the cocoa to the second half, mix and pour into the second pan.
  • Baking: Place both pans into the preheated oven and bake for about 25 minutes, until the cakes are golden and springy. Let cool, turn out and cut into slices according to the shape of the pan.
  • Cream: Cook a thick pudding from the milk, pudding powder, sugar and vanilla. After cooking, cover with cling film so a skin doesn't form, and let cool completely. Beat the butter with the sugar, then add the cooled pudding spoonful by spoonful and finally the rum. The cream should be smooth and delicate.
  • Assembling the cake: On a serving plate start layering alternating light and dark slices of cake – spread cream between each layer. Continue until you have used all the ingredients. Use the remaining cream to cover the entire surface of the cake and smooth it.
  • Glaze: Melt the chocolate with the oil in a water bath, let it cool slightly and pour over the cake. Spread evenly and optionally decorate.
  • Cooling: Place the cake in the refrigerator for at least 2 hours, ideally overnight, so the cream and chocolate can set.
