This no-bake coconut cake belongs to those desserts that you can prepare in no time, but taste as if you had spent hours on them. The delicate coconut filling, layers of butter cookies and chocolate glaze form the perfect combination of flavors and textures. It is ideal for any occasion – a festive lunch, guests or a quick weekend dessert.

Preparation procedure

  • Preparation of the coconut cream: In a saucepan, mix the milk with the flour and half of the coconut. Bring to a boil, stirring constantly, and cook until the mixture thickens. Remove from the heat, add the powdered sugar and vanilla sugar and stir. Finally, fold in the remaining coconut and let cool. Work the softened butter into the cooled cream so that it is smooth and silky.
  • Preparation of the biscuit base: Crush the butter cookies finely. Add the cocoa, powdered sugar, apricot jam, rum, butter and gradually mix in the milk. The mixture should be soft and cohesive.
  • Layering the cake: Place a quarter of the biscuit mixture into a pan approximately 25 × 30 cm and spread it evenly. Spread half of the coconut cream over it, then another layer of the biscuit dough, the second half of the cream and finally finish with the remaining dough. Smooth the surface.
  • Chocolate glaze: Melt the chocolate with the oil in a double boiler or in the microwave and stir until you obtain a smooth mixture. Coat the surface of the cake with the glaze and refrigerate for at least 6 hours, ideally overnight, so the dessert sets and the flavors meld.
