  • Preparing the starter and dough Crumble the yeast in a bowl, sprinkle with a tablespoon of sugar (or just a pinch), pour over a little lukewarm milk and let activate for 5 minutes. Then add the remaining milk, the egg, salt, coarse flour and finally the bread cubes. Work into a smooth non-sticky dough (with a mixer and hook 5–7 min, by hand 10 min).
  • First proofing Cover the bowl with a clean towel or cling film and let it rise in a warm place for 45 minutes, until the dough doubles in volume.
  • Shaping and second proofing Divide the dough into two equal parts and shape two rolls about 6–7 cm in diameter. Transfer the rolls to a floured tray, lightly brush them with oil and let them finish rising under a towel for 15 min.
  • Steaming Bring water to a boil in a pot or steamer. Place the rolls on the steamer or a perforated plate lined with a towel (this prevents sticking), cover and cook over low heat for 25 min. You can briefly release the steam once during cooking, but do not add extra water.
  • Slicing and serving Remove the finished dumplings immediately and let rest for a few seconds. Cut with a thread or a very sharp knife into slices about 1.5 cm thick.
