Pour the mixture into the boiling milk and cook a thick pudding. Cover it with cling film to prevent a skin from forming, and let it cool. Whip the butter until fluffy and gradually beat in the cooled pudding. The result should be a smooth, airy cream similar to whipped cream.
  • Assembly of the pastry Spread the prepared cream evenly over the cooled cake base. Sprinkle the surface with toasted ground nuts, which will give the pastry an intense flavor and a beautiful appearance. Then chill the dessert in the refrigerator for at least 2 hours, ideally overnight.
