Preparation procedure

  • Work the flour, sugar, egg, lemon juice, ground nuts and cold butter into a dough. Wrap in plastic wrap and refrigerate for 1 hour.
  • Take small pieces from the dough, press them into muffin/cupcake molds (no need to grease). Bake in the oven at 180–190 °C for approximately 12–15 minutes. Unmold and let cool.
  • Bring the ground walnuts, sugar, hot milk and rum to a boil. Cook briefly and let cool.
  • Whisk the eggs, sugar and cocoa over a double boiler until thick and foamy. Let cool. Beat the butter and gradually beat in the cocoa mixture until a smooth cream forms.
  • Spread jam inside the cups, add a portion of the nut filling and let cool briefly.
  • Using a piping bag, pipe the chocolate cream and place the cups to chill further.
  • Melt the chocolate with the butter and oil. Carefully dip the chilled cups into the chocolate coating and quickly return them to the refrigerator.
  • Let set well. They are best on the second to third day.
