Preparation procedure

  • Cocoa sponge Beat the eggs with the sugar until frothy. Add the warm water, cocoa, flour mixed with the baking powder and mix. Pour the batter onto a baking tray lined with baking paper and bake in a preheated oven at 180 °C for about 10–12 minutes. Bake two cocoa layers in the same way.
  • Light sponge Proceed the same as for the cocoa sponge – beat the eggs with the sugar, add the warm water, flour and baking powder. Bake at 180 °C for about 12 minutes, until the sponge turns golden.
  • Orange syrup In a small saucepan, mix the Sunquick orange syrup with the water and simmer briefly. Let cool.
  • Vanilla cream From the milk, sugar, vanilla sugar and pudding powder, cook a thick pudding. Cover it with cling film and let it cool completely. Beat the butter until fluffy and gradually beat in the cooled pudding. You will get a smooth and creamy vanilla cream.
  • Assembling the cake Spread half of the cream on the bottom cocoa layer, top with the light layer and drizzle it with the orange syrup. Then spread the second half of the cream and finish with the second cocoa layer. Press the cake down and let it rest in the refrigerator for at least 6 hours, ideally overnight.
  • Glaze Melt the dark chocolate in a water bath and pour it onto the top layer of the cake. Spread it smoothly and let it set.
