Preparation procedure

  • Sponge cake batter In a bowl, whisk together the milk with the instant coffee, oil, vinegar and vanilla sugar. In a larger bowl sift the dry ingredients (flour, cocoa, baking powder, baking soda, salt and sugar) and gradually combine them with the wet mixture until a smooth batter forms.
  • Baking the sponge Spread the batter onto a baking tray lined with parchment paper (approx. 25 × 35 cm) and bake in a preheated oven at 180 °C for about 25 minutes. Remove the finished sponge and let it cool slightly for 5 minutes.
  • Preparing the cream In a medium saucepan combine the condensed milk, 400 ml of milk and the cocoa. Heat to a gentle simmer. Meanwhile whisk the remaining 50 ml of milk with the cornstarch. Once the mixture starts to bubble slightly, stir in the milk with the starch and cook, stirring constantly, until the cream thickens. Remove from the heat and stir in the butter until smooth.
  • Piercing and filling Pierce the warm sponge with the handle of a wooden spoon or a skewer in several places to create holes. Pour the hot cream evenly over the surface and let it absorb for a while.
  • Chilling and serving Let the cake cool completely and ideally chill it in the refrigerator for 1 hour. Before serving the cream will firm up slightly and the cake will slice easily.
