  • Preparing the filling Grate the hard cheese. Cut the ham into small cubes. Finely chop the onion and press the garlic. Mix all the ingredients in one bowl, season with salt and pepper and add a little marjoram to taste.
  • Shaping the filled potato pancakes Take a small amount of the potato mixture into your palm, spread it out as the base of a patty. Put some of the filling (cheese + ham) in the center. Fold the edges of the potato mixture over the filling and press lightly so the filling stays securely inside. Finally shape the patty. Repeat the same process with the remaining ingredients.
  • Frying Heat the olive oil in a pan (a medium layer is enough). Place the filled potato pancakes and fry on both sides until golden – usually 3–5 minutes per side, depending on thickness and heat intensity. Take care they don’t burn but become nicely crispy.
