This potato roulade combines thin slices of golden potatoes, an aromatic mix of sautéed vegetables, juicy bacon and melty cheese. It’s ready in less than an hour and, thanks to its attractive shape, will catch everyone’s eye at the table.

Preparation procedure

  • Preparing the bottom layer Preheat the oven to 200 °C. Peel the potatoes and slice them very thinly (mandoline or sharp knife). Line a baking sheet with parchment paper and sprinkle with half of the cheese. Place the potato slices on the cheese so they slightly overlap. Drizzle with oil, season with salt and pepper. Bake for 30 min, until the potatoes soften and begin to turn golden.
  • Preparing the vegetable filling Fry the bacon in a pan until golden, then set aside. In the same fat (or in a tablespoon of oil) sauté the onion until translucent, add the carrot and after a moment the cabbage. Sauté until the vegetables are tender but still firm. Season with salt and pepper and stir in the chopped spring onion.
  • Assembling the roulade Spread the vegetable mixture evenly over the baked potatoes. Sprinkle with the remaining cheese and the fried bacon. Using the parchment paper, roll the roulade tightly.
  • Final baking Transfer the roulade back to the baking sheet, sprinkle with cheese and chives. Bake for 10 min at 200 °C, until the cheese melts.
  • Serving Slice and serve warm. We recommend sour cream or a garlic dip.
