This poured fruit cake combines a delicate crust, juicy fruit and a smooth quark cream. Thanks to the easy preparation and the variety of fruit, it is ideal for any occasion – as a sweet snack with coffee, a family celebration or a cheerful summer barbecue.

Batter:

Fruit layer:

    500–600 g fruit to taste (fresh or frozen: plums, strawberries, raspberries, apricots…)

      Preparation procedure

      • Preparing the batter: In a bowl, beat the eggs with the granulated and vanilla sugar until frothy. Add the milk, oil, sifted flour and baking powder. Stir until a smooth batter forms that should not be too sticky.
      • Preparing the baking tray: Preheat the oven to 160 °C (convection 140 °C). Grease a tray approximately 30×40 cm and dust with flour. Pour the batter evenly and smooth the edges to form a small "basin".
      • Layering the fruit: Arrange the fruit in a single layer on the batter. If using frozen fruit, thaw it and drain any excess juice.
      • Spreading the quark: In another bowl, mix the quark, egg, powdered and vanilla sugar (and pudding powder if using). Gently spread the quark mixture over the fruit in the same pattern.
      • Baking: Bake in the preheated oven for 35–40 minutes, until the surface turns golden and the quark layer has set.
      • Cooling and serving: After baking, let the cake cool for at least 30 minutes. Serve cut into 12–16 portions, optionally dusted with powdered or vanilla sugar.
