This recipe presents the classic version of strudel, in which two beloved layers come together – aromatic apple filling and a delicate quark cream. The result is crisp, tender and ideal as a homemade dessert with coffee or tea.

Preparation procedure

  • Dough: From the basic ingredients (flour, margarine, egg, sugar, yeast and lukewarm milk) knead into a smooth dough. Divide it into 4 portions and let rest briefly.
  • Preparing the fillings: Quark filling: mix the quark, egg, sugar, vanilla sugar, raisins and add a little semolina. Apple filling: mix the grated apples with sugar, cinnamon and lemon juice; briefly stew over low heat, let cool.
  • Shaping: Roll each piece of dough into a sheet (e.g. 40 × 25 cm). Cut the long sides of each sheet into strips about 8 cm wide. Spread the quark filling or apples in the middle of the sheet (depending on the variant). Alternately fold the strips from one side and the other, creating a „lattice“ effect.
  • Baking: Transfer the strudels to a baking sheet lined with parchment paper and brush with the beaten egg. Bake in a preheated oven at 180 °C until they begin to brown (depending on the size and thickness of the dough).
  • Slicing and serving: After baking, let cool slightly and then slice diagonally into portions.
