Preparation procedure

  • Preparing the dough: Mix all the ingredients for the dough and work into a smooth mass. Put the finished dough in the freezer for 15–20 minutes to firm up. Then use it to fill the cupcake molds – the bottom and sides should be covered, leave a small indentation in the center.
  • Baking: Bake in a preheated oven at 170 °C for approximately 7 minutes, until the cupcakes are lightly golden. Let them cool and carefully remove them from the molds.
  • Nut filling: In a bowl, mix the ground nuts, powdered sugar, vanilla sugar and rum. Stir until you get a thick, cohesive mixture.
  • Filling the cupcakes: Place a thin layer of jam into each cupcake, top with the nut filling and let set.
  • Cream: Beat the eggs with the sugar and vanilla sugar in a double boiler until a thick foam forms. Let cool completely, then add softened butter and cocoa. Whip until you obtain a smooth, delicate cream. Transfer the cream into a piping bag and pipe it onto each cupcake.
  • Finishing: Chill the cupcakes in the refrigerator. Once the cream has set, dip their tops into the melted chocolate glaze. Let harden in the cold.
