Izidor cupcakes are among the most delicate and most delicious Christmas confections that never disappoint. The combination of tender nut dough, rum filling, airy cream and chocolate glaze forms an irresistible harmony of flavors. This recipe is passed down from generation to generation and rightfully ranks among the classics of Czech Christmas.

Preparation procedure

  • Preparing the dough: Mix all the ingredients for the dough and work into a smooth mass. Put the finished dough in the freezer for 15–20 minutes to firm up. Then use it to fill the cupcake molds – the bottom and sides should be covered, leave a small indentation in the center.
  • Baking: Bake in a preheated oven at 170 °C for approximately 7 minutes, until the cupcakes are lightly golden. Let them cool and carefully remove them from the molds.
  • Nut filling: In a bowl, mix the ground nuts, powdered sugar, vanilla sugar and rum. Stir until you get a thick, cohesive mixture.
  • Filling the cupcakes: Place a thin layer of jam into each cupcake, top with the nut filling and let set.
  • Cream: Beat the eggs with the sugar and vanilla sugar in a double boiler until a thick foam forms. Let cool completely, then add softened butter and cocoa. Whip until you obtain a smooth, delicate cream. Transfer the cream into a piping bag and pipe it onto each cupcake.
  • Finishing: Chill the cupcakes in the refrigerator. Once the cream has set, dip their tops into the melted chocolate glaze. Let harden in the cold.
