Preparation procedure

  • Preparing the quark base Place the quark in a bowl, add the granulated sugar, vanilla sugar and a pinch of salt. Mix until a smooth and soft mixture forms. If the quark is lumpy, briefly whisk it with a whisk.
  • Adding the eggs and oil Add the eggs to the quark mixture one at a time, mixing well after each addition. Finally pour in the oil and work it into the mixture. Thanks to the oil, the cake will stay moist even after cooling.
  • Incorporating the dry ingredients In a separate bowl, mix the plain flour with the baking powder. Sift the dry mixture into the quark base and slowly fold it in with a spatula. The batter should be medium-thick and gently creamy.
  • Adding the cherries If you're using frozen cherries, there's no need to thaw them. Just lightly coat them in a small spoonful of flour so they don't sink to the bottom. Gently fold them into the batter.
  • Baking Line a 24 cm diameter pan with baking paper or grease it with oil. Pour the batter into it and spread evenly. Bake in an oven preheated to 180 °C for 40–45 minutes. The cake is done when a skewer inserted comes out dry.
  • Cooling and serving After baking, let the cake cool slightly, then dust with powdered sugar. It tastes best still slightly warm, but it's great cold too.
