  • In a bowl mix the grated butter and flour. Work into crumbs. Then whip the sour cream and sugar until smooth. Stir in the yolk and mix everything thoroughly.
  • Add the baking powder and a pinch of salt to these ingredients. Then fold the liquid mixture into the flour with the butter. Work into a supple dough, wrap it in plastic wrap and refrigerate for 40 minutes.
  • In a bowl beat the quark, sour cream, sugar and egg white until smooth.
  • Roll out the dough on a floured work surface and cut out circles. Place the quark filling on half of the circles and cover with the other pieces of dough.
  • Transfer the pieces to a baking sheet lined with parchment paper, brush them with the yolk and bake in a preheated oven at 180 °C for about 25 minutes, until golden.
  • After baking, sprinkle with sugar and serve.
