Preparation procedure

  • Preparation of the apple mixture: Clean and grate the apples. Move them to a pan, sweeten with granulated and vanilla sugar, add the chopped nuts and cinnamon. Sauté over medium heat 2–3 minutes, just until the sugar begins to caramelize. Then remove from heat and let the mixture cool.
  • Preparation of the batter: In a bowl beat the eggs with the granulated and vanilla sugar into a light, airy foam. Pour in the milk and whisk briefly more. Finally sift the flour with the baking powder and gently fold in until a smooth batter forms.
  • Assembling the cake: Line a baking tray approximately 20 × 30 cm with baking paper. Evenly spread the cooled apple mixture over it. Pour the batter over and use a spatula to spread it across the entire surface.
  • Baking and finishing: Bake in an oven preheated to 180 °C (fan) for 12 minutes, until the surface turns golden. Using the baking paper, turn the cake over and roll it up (classic strudel technique). Let it cool for a while, then press the roll flat and dust with powdered sugar.
